Raw Thai Coleslaw

VEGAN GLUTEN FREE
RAW THAI COLESLAW


Raw Thai Coleslaw
 Serves 3 to 4 people


SALAD:
3 cups chopped cabbage
1 cup sliced zucchini
1 cup sliced bell pepper
1 cup shredded carrots
1 bunch of fresh basil, chopped
1 bunch fresh mint, chopped
1 bunch fresh cilantro, chopped
1 bunch fresh chives, chopped

DRESSING:
2 tablespoons lemon juice
2 tablespoons apple cider vinegar
1/4 cup Nama Shoyu
2 tablespoons agave nectar
1/4 cup olive oil
2 cloves of garlic, peeled
1 teaspoon chili powder
1 1/2 tablespoons curry powder
pepper flakes (optional)


In a blender, combine all dressing ingredients and blend until smooth. Pour dressing over salad, mix and serve.
